Instructions
  1. Preheat oven to 325 degrees.
  2. Add flour, baking soda and salt to a bowl and set aside.
  3. Mix egg, sugar and olive oil. Stir until well combined.
  4. Add the dry ingredients to the wet and stir well.
  5. Add almond milk, vanilla and mashed ripped bananas and mix well.
  6. Mix in walnuts and pour batter into loaf pan.
  7. Top the batter with remaining 1/4 cup of walnuts and 1/8 cup of brown sugar.
  8. Cook 50-75 minutes, checking regularly until a knife comes out clean.
